Apple Pancake | Valleyview Alberta Photographer

I received a few comments regarding the apple pancake featured in my Thankful Thursday post found here.  The story behind the pancake is that I don’t actually make it myself.  Someone else makes it for me…  and that probably makes it taste even better:)

On Saturday, I was asked to make it and while making it, I photographed the process.  Here’s the recipe (deciphered from two scraps of paper!), just in case you’d like to enjoy some apple pancake too!

Apple Pancake

Ingredients

2 cups of apples (I used 4 apples which is probably a bit better than 3 cups and it was a perfect amount of apple topping… in my opnion)

1/2 cup of juice (you can use almost any kind of juice you like, but I like it best with apple juice)

3 Tbsp. of butter

4 eggs

2/3 cup of milk

2/3 cup of flour

1/2 tsp. of salt

1/4 tsp. of nutmeg

1/2 cup of nuts (I used walnuts but you can use whatever you like)

1 Tbsp. of sugar

1/2 to 1 tsp. of cornstarch

lemon juice

Cinnamon

Cloves

Preheat oven to 425

1.  Peel, core, and slice apples.  Put apples in a medium sized saucepan.  Add 1/2 cup of juice.  Heat over medium-low heat.

2.  Melt butter by putting it in a cast iron skillet (10″ skillet — this is what you will use to bake the pancake in) and placing it in the oven.

3.  In a large bowl, beat eggs.  Add milk, flour, salt, and nutmeg.  Mix well.

4.  Remove skillet from the oven.  Add the melted butter from the skillet to the bowl.  Next, add the nuts and sugar to the bowl.  Mix together.

5.  Pour batter into skillet and place in oven.  Bake for 15-20 minutes or until pancake is golden in colour.

6.  Just before the pancake is finished, add cinnamon and cloves to the apples cooking in the saucepan.  Add lemon juice to the apples.  Add enough cornstarch to thicken the apples (tip:  I used a tea strainer to add the cornstarch to help eliminate/reduce lumps in the apple topping).  Cook mixture until it bubbles and then remove it from the heat.

7.  When the pancake is finished (it should have “poofed-up” a bit during baking), remove it from the oven and pour the apples on top.

8.  Cut the pancake and serve with your favourite maple syrup:)

Variations:  I’ve had this pancake made with other fruit too…  peaches, nectarines, berries. etc.

Thankful Thursday | Valleyview Alberta Photographer

Here are the things I am thankful for in Week 6 of my 365 project:

Day 36 – I am thankful to move some files around.  This was a task that was long overdue!

Day 37 – I am thankful for my collection of camera bags.  This one in particular because it is great when I just need a light-weight bag (I think it weighs about a million pounds lighter than my “big” bag).  I am thankful for my friend who told me about it and thankful she found one for me too.

Day 38 – I am thankful for the latest addition to my photography book collection.  I love this book.  The images are pure eye candy and I love the way that it is written.  Definitely a great buy.

Day 39 – I am thankful for orange juice.

Day 40 – I am thankful for things that come in golden-coloured boxes.  In fact, I love them:)

Day 41 – I am thankful that there are still bits of bright colour outside.

Day 42 – I am thankful to play with my latest glass.  It’s only been a few days, but I am in love already!

Thankful Thursday | Valleyview Alberta Photographer

We’re now a month into the 365 days of gratitude project!  Here are the things I am thankful for in Week Five:

Day 29 – I am thankful for a cup of hot chocolate…  especially after a night of shooting in the dark.

Day 30 – I am thankful for apple pancake.  I love a good breakfast:)

Day 31 – I am thankful for more storage.

Day 32 – I am thankful for ice cream.  Especially when it has big chunks of berries in it!

Day 33 – I am thankful for homemade chocolate chip cookies.

Day 34 – I am thankful for some new reading material…  you can never have too many books (in my opinion, anyway).

Day 35 – I am thankful for Canadian maple syrup.  So delicious.  Especially on caramelized-banana-walnut-chocolate chip pancakes!

The F Family | Valleyview Alberta Photographer

I had a session with the F Family on Sunday and it was so much fun!  Their daughter is so cute and so funny.  I wish I had the session on video because she continued to make me laugh the entire time and I am sure her antics would make you laugh too:)

Wow! These are fantastic photos! I LOVE the photo of their daughter with the ornaments on the tree and the great laughing, smiling shot of ther too. The legs shot was very cool! Everyone’s spirit just shines through in these photos!
